It's perfectly okay not to truss a bird, but it will keep its shape better during roasting if you do. Here's how.
  1. Pass the middle of a long piece of string underneath the ends of the drumsticks and cross the ends of the string to make an X.



  1. Pull the ends of the string down toward the tail.


  1. Pull the ends of the string back along the body toward the bird's back, catching the wings underneath the string.


  1. Pull the string beneath the backbone at the neck opening. Tie the two ends of the string in a firm knot.
