cooking time 40 minutes
You will need:
200 g short crust pastry (see Pastry)
30 g butter or margarine
230 g soft cream cheese or cottage cheese
60 g finely grated Parmesan cheese or rather Cheddar cheese
1 can sweet corn
2 grated raw carrots
2 or 3 tablespoons milk
To garnish:
tomato
cucumber
1. Bake pastry 'blind' in flan tin until golden in colour.
2. Cream the fat with the cream cheese.
3. Add all the other ingredients.
4. Put into the flan case and serve topped with slices of cucumber and tomato.
5. If you would like this as a hot dish, garnish with tomato slices round the edge of the flan and put into moderate oven (190 C).
