Welsh Rarebit:
Cooking time 10 minutes
you will need:
30 g butter or margarine
15 g flour
80 dl milk
1 tablespoon beer or ale or 1 dessertspoon Worcestershire sauce
180 g cheese, grated
seasoning
mustard
toast
1. Melt margarine in pan, stir in flour and cook until roux is dry.
2. Add cold milk, bring to the boil and cook until very thick.
3. Season well, adding sauce or beer and nearly all the cheese.
4. Spread on hot toast, sprinkle remainder of cheese on top.
5. Brown under hot grill.
Baked Bean Rarebit:
1. Make Welsh Rarebit
2. Cover with baked beans and tomato sauce.
3. Serve with grilled bacon and a green salad.
